What you will have an opportunity to do:
The Pastry Junior Sous Chef is responsible for the day-to-day pastry and bake shop production, under the direction of the Pastry Sous Chef.
**Must be available to work from 2pm - 10:30pm**
ESSENTIAL FUNCTIONS
- Maintain a professional attitude, demeanor and appearance. Wear proper uniform and footwear at all items.
- Consult your supervisor if you are unsure of tasks and procedures.
- Store all items in approved containers that are wrapped, dated and labeled. Follow food handlers’ guidelines.
- Sign in and out on the authorized form. Have your supervisor initial it before leaving.
- Clean all small equipment such as mixers, buffalo choppers, etc., yourself immediately after using them. Supervise staff to ensure consistent adherence to this policy.
- Prepare items listed on production sheet.
- Rotate old stock out first. Ask chef if freshness is questionable.
- Date and label all items going into freezer and walk-in, clean as you go.
- Supervise Baker / Pastry Cooks I, II and III in production, sanitation and adherence to company procedures.
- Participate in the development of bread and dessert menus for food & beverage outlets and banquets.
- Produce material and food requisitions as necessary.
- Demonstrate commitment to making a conscientious effort to eliminate or reduce the risk of injury to our guests and associates, damage to our property or the property of others. Know the correct action to take in the event of an emergency, and demonstrate this knowledge by acting appropriately in the event of an emergency.
- Additional duties as needed.
What are we looking for?
EDUCATION
- High School Diploma or GED.
- Accredited Culinary School or Apprenticeship, preferred.
EXPERIENCE
- Minimum 3 years in a Pastry Department in a hotel.
LICENSES OR CERTIFICATES
- Maricopa County Food Handler Card
