Отвечает за правильную организацию и применение лечебного питания во всех отделениях больницы. Осуществляет руководство диетическими сестрами и всеми работниками пищеблока. Консультирует врачей учреждения по вопросам лечебного питания Обеспечивает правильность назначения и дифференцированное применение лечебного питания Проводит анализ эффективности лечебного питания и регулярно докладывает об этом на заседании больничного совета по лечебному питанию Контролирует составление меню, правильность соблюдения технологии приготовления диетических блюд, их качество, химический состав Контролирует работу пищеблока путем ежедневного посещения его, снятия проб готовой пищи и выборочного направления контрольных блюд на лабораторные исследования, согласно программы производственного контроля Участвует в составлении 7-дневного меню по всем диетам, применяющимся в учреждении. Составляет свободное 7-дневное меню Обеспечивает строгое соблюдение установленного порядка выписки больным питания и совместно с заведующими отделениями определяет перечень и количество продуктов, которые разрешено передавать больному родственниками Организовывает систематическое повышение уровня знаний медицинских работников и работников кухни по диетическому питанию, а так же проводит инструктажи по технике безопасности, охране труда среди технического обслуживающего персонала с регистрацией в журнале. Готовит квартальные и годовые отчеты о выполнении плана работы пищеблока. Проводит активную санитарно-просветительскую работу по пропаганде рационального и лечебного питания как среди больных, так и среди сотрудников учреждения Проверяет истории болезни в отделениях на соответствии назначаемых диет. Контролирует качество продуктов, находящихся на складах, в пищеблоке, условия хранения и сроки годности запасов.
