3.1. Уметь пользоваться сборником рецептур, технологическими картами при изготовлении блюд и кулинарных изделий. 3.2. Не допускать использование сырья и пищевых продуктов, содержащих потенциально опасные для здоровья вещества химического и биологического происхождения в количествах, превышающих допустимые уровни в соответствии с медико-биологическими требованиями и саннормами качества. 3.3. Уметь готовить блюда для детей: каши, мясные, овощные, фруктовые, молочные блюда, выпечку, напитки в соответствии с нормативной документацией. 3.4. Соблюдать: - санитарно-гигиенические требования при производстве кулинарной продукции, условия хранения и реализации продукции; - правила по технике безопасности, охране труда, противопожарной безопасности; - правила личной гигиены, график прохождения медосмотра. 3.5. Содержать: - рабочее место в соответствии с требованиями санитарных норм и правил. 3.6. Повар полностью отвечает за полноту вложения сырья в приготовляемых блюдах и технологию приготовления. 3.7. Является материально-ответственным лицом.

Повар детского питания должен знать: - основы и значение питания детей дошкольного и школьного возраста; - характеристику и биологическую ценность различных пищевых продуктов, признаки доброкачественности пищевых продуктов и органолептические методы их определения; - сроки хранения и реализации сырой и готовой продукции, полуфабрикатов; - особенности кулинарной обработки продуктов для детей; - технологию приготовления первых, вторых, третьих, холодных блюд и изделий из теста; - нормы, соотношение и последовательность закладки сырья; объем блюд в соответствии с возрастом детей; - правила пользования таблицей замены продуктов; - устройство и принцип работы обслуживаемого механизированного, теплового, холодильного и другого оборудования, правила его эксплуатации и ухода за ним; - санитарные правила содержания пищеблока; - правила личной гигиены; - меры предупреждения пищевых отравлений; - правила раздачи пищи детям; - правила и нормы по охране труда, производственной санитарии; - правила пользования средствами индивидуальной защиты; - требования, предъявляемые к качеству выполняемых работ; - требования по рациональной организации труда на рабочем месте
