Должностные обязанности повара школьной столовой1. Основные производственные обязанности Приготовление блюд: Осуществление тепловой и холодной обработки продуктов в строгом соответствии с технологическими картами и утвержденным меню. Соблюдение норм выхода: Обеспечение точного соответствия выхода готовых блюд (веса порций) требованиям технологических карт. Обработка сырья: Первичная обработка овощей, мяса, рыбы, птицы с соблюдением правил товарного соседства (избегание перекрестного загрязнения сырых и готовых продуктов). Работа с оборудованием: Эксплуатация кухонного оборудования (плиты, жарочные шкафы, овощерезки, пароконвектоматы, мясорубки) в соответствии с инструкциями по технике безопасности. Порционирование: Участие в порционировании и выдаче готовых блюд в соответствии с графиком питания обучающихся. 2. Санитарно-гигиенические требования (критически важный блок) Личная гигиена: Строгое соблюдение правил личной гигиены (чистая спецодежда, отсутствие украшений, коротко остриженные ногти, головной убор, закрывающий волосы). Контроль качества: Проверка качества поступающего сырья на соответствие срокам годности, органолептическим показателям и наличие сопроводительных документов. Суточные пробы: Обязательная закладка суточной пробы от каждой партии приготовленной пищи в промаркированную емкость (хранится 48 часов в холодильнике). Это требование СанПиН, его нарушение грубейшее нарушение. Чистота рабочего места: Поддержание идеальной чистоты на рабочем месте, в складских помещениях, холодильниках и используемом инвентаре. Проведение дезинфекции поверхностей согласно графику. Температурный режим: Контроль температуры блюд при выдаче и соблюдение режимов хранения полуфабрикатов и готовой продукции в холодильном оборудовании. 3. Документация и ХАССП Ведение журналов: Заполнение журналов бракеража готовой продукции, журналов здоровья (отсутствие признаков заболеваний у персонала), журналов температурного режима холодильного оборудования. Принципы ХАССП: Соблюдение критических контрольных точек при производстве (контроль температуры, времени обработки, чистоты). 4. Безопасность и дисциплина Техника безопасности: Соблюдение правил охраны труда при работе с электроприборами, острым инвентарем и горячими поверхностями. Учет продуктов: Участие в инвентаризациях, контроль расхода продуктов, предотвращение порчи сырья. Субординация: Выполнение распоряжений заведующего производством (шеф-повара) и директора школы.
