Соблюдение санитарно-эпидемиологического режима. Кухонный рабочий обеспечивает чистоту помещений пищеблока, оборудования, инвентаря и строго следует требованиям СанПиН. Работа с продуктами и сырьём. Он доставляет овощи из овощехранилища, осуществляет их первичную обработку (очистку, переборку зелени и плодов, удаление дефектных экземпляров и посторонних примесей), а также переносит полуфабрикаты и сырьё из кладовой. Открывает тару (бочки, ящики, мешки), вскрывает консервные банки, выгружает продукцию. Транспортировка и доставка. Рабочий переносит готовую пищу к раздаче, а также транспортирует продукцию, тару и посуду внутри пищеблока. Вспомогательные работы при приготовлении блюд. В частности, он заполняет котлы водой, включает электрическое или газовое оборудование (котлы, плиты, шкафы, кипятильники). Уборка и дезинфекция. Рабочий собирает и утилизирует производственные отходы в специальные контейнеры, очищает мусоросборники, промывает их дезинфицирующим раствором и выносит мусор в отведённое место. Проверка исправности оборудования. В начале и в конце рабочего дня он проверяет исправность оборудования, мебели, замков, оконных стёкол, водопроводных кранов, раковин, электроприборов (выключателей, розеток, лампочек) и отопительных приборов. Соблюдение правил личной гигиены. Он работает в спецодежде, хранит личные вещи и комнатные растения вне производственных помещений, снимает рабочую одежду и головной убор при посещении туалета, моет руки с мылом или иным моющим средством после посещения туалета. Соблюдение последовательности процессов. Важно исключать встречные потоки сырья, полуфабрикатов и готовой продукции, использованной и чистой посуды, а также встречное движение персонала Участие в генеральных уборках. Соблюдение правил охраны труда, пожарной и электробезопасности. Знание антитеррористического законодательства и действий в кризисных ситуациях. Оказание первой помощи пострадавшим .
