Руководство работой пищеблока . Шеф-повар контролирует выполнение технологических потоков и процессов, соблюдение санитарных режимов работы и техники безопасности. Контроль за нормами вложения продуктов при изготовлении кулинарных изделий, качеством готовой продукции, весом изделий и отпуском готовых рационов. Бракерский контроль поступающего сырья, готовых блюд и изделий в соответствии с санитарными требованиями. Обеспечение условий для хранения и реализации пищевых продуктов, температурного режима. Ведение бухгалтерского учёта поступающей и реализуемой продукции, своевременное оформление меню-требований, накопительных ведомостей, графиков посещаемости и другой бухгалтерской документации. Контроль над проведением расчётов необходимого количества товара для заключения договоров и контрактов, учёт исполнения договорных обязательств. Контроль над исполнением натуральных норм питания в образовательном учреждении. Обеспечение персонала технико-технологическими картами, инструкциями и другой нормативной документацией. Обучение работников кухни в соответствии с должностными обязанностями и инструкциями. Оформление меню-требования на каждый рабочий день, расчёты необходимого количества продуктов на порцию, подготовка заявок на поставку продукции. Калькуляция стоимости рационов питания в соответствии с нормами закладки, утверждёнными нормативными документами, отпускными ценами, сезонными нормами отходов и т. д..

При трудоустройстве необходимо предоставить справку об отсутствии судимости, санитарную книжку. Опыт работы приветствуется.
