Контролировать правильное хранение суточного запаса продуктов, полуфабрикатов и готовой пищи на пищеблоке. Проверять качество продуктов при их поступлении на склад и пищеблок; контролировать правильность хранения запаса продуктов питания. Подсчитывать состав и калорийность рациона, составлять раскладки на все блюда, приготовленные на пищеблоке. Составлять меню для пациентов. Инструктировать работников пищеблока по соблюдению санитарных требований при обработке продуктов. Осуществлять общее руководство технологией приготовления и витаминизацией блюд. Контролировать и обеспечивать правильность закладки продуктов в котел. Присутствовать при взвешивании продуктов при приёме со склада согласно продуктовой ведомости. Контролировать выдачу продуктов поварам по весу и счету. Ежедневно снимать пробу с готовой пищи. Производить отбор суточной пробы, обеспечивая ее правильное хранение, а также контролировать стерилизацию посуды, предназначенной для хранения суточной пробы. Контролировать правильность отпуска блюд из пищеблока в отделение согласно поступившим порционным требованиям и раздаточной ведомости . Организовывать питание больных в пределах назначенной диеты. Ежедневно оформлять меню-раскладку в соответствии с картотекой блюд и сводных меню. Составлять меню-раскладки по лечебному питании, подсчитывать химический состав и калорийность по диетам. Своевременно предоставлять подсчёт заказов блюд суточного рациона по всем лечебным столам. Контролировать санитарно-гигиеническое состояние помещений пищеблока, раздаточных, буфетных и столовых, инвентаря, посуды.

Среднее профессиональное медицинское образование по спец. "Сестринское дело", наличие действующей аккредитации по специальности "Диетология", санитарная книжка. Ответственность.
