Rattaché(e) au Chef exécutif et dans une équipe à taille humaine, votre rôle principal sera d’assurer, de manière autonome, la production et la qualité des plats de sa partie tout en encadrant les commis et en contribuant au bon fonctionnement global de la cuisine banquet.

Description du poste

Technique métier :

  • Réaliser des préparations préliminaires
  • Fabriquer, dresser les plats relevant de sa partie, conformément aux fiches techniques et envoyer les plats dans les bons délais et à bonne température
  • Veiller à la présentation, à la qualité et à la bonne température des plats
  • Participer si besoin à la création de nouvelles fiches techniques
  • Incarne l’esprit Heartist dans ses interactions avec les clients

Management des équipes / implication transverse :

  • Suivre et sensibiliser son équipe sur l'optimisation des coûts et la réduction des pertes de matières premières
  • Être responsable du perfectionnement des commis de cuisine, des apprentis(es) et des stagiaires
  • Faire preuve d’exemplarité envers le reste de l’équipe, et développer ainsi la motivation et l’adhésion de ses équipes en créant un bon climat de travail
  • Travailler en collaboration avec les différents services de l’hôtel

Gestion :

  • Être impliqué dans l'atteinte des objectifs de son service (ratio) en respectant les fiches techniques
  • Elaborer une liste prévisionnelle de produits nécessaires aux réalisations culinaires
  • Réceptionner et vérifier de manière quantitative et qualitative les livraisons

Hygiène/Sécurité des personnes/environnement :

  • Contribuer au Nettoyage et rangement des différents lieux de travail et à la sécurité alimentaire en respectant au quotidien les règles d'hygiène HACCP
  • Connaître et appliquer les conduites à tenir en cas d’évacuation incendie

Qualifications

  • Vous disposez d’un CAP ou BAC professionnel cuisine
  • Expérience de minimum 3 ans attestant d'un savoir-faire technique maîtrisé sur gros volume (400/600 couverts)
  • Vous faites preuve d’esprit d’équipe et de leadership
  • Vous êtes réactif et justifiez d’une bonne gestion de stress
  • Le souci du client, la rigueur et l’organisation font partie intégrante de votre façon de travailler
