Avec ses 764 chambres, son fitness, son centre de conventions de plus de 3 000 m², son bar et ses restaurants, dont le Benkay, table gastronomique japonaise, notre hôtel accueille une clientèle internationale. Près de 300 collaborateurs y œuvrent chaque jour, avec une exigence constante : la qualité de service, l'excellence opérationnelle et la performance.

Description du poste

Votre rôle principal sera d’assurer, de manière autonome, la production et la qualité des plats de sa partie tout en encadrant les commis et en contribuant au bon fonctionnement global de la cuisine.

Vos missions :

  • Organiser la mise en place et la préparation du buffet petit-déjeuner selon l’activité prévue
  • Réaliser les préparations chaudes et froides dans le respect des recettes et standards de l’établissement
  • Garantir la qualité, la fraîcheur et la présentation des produits tout au long du service
  • Assurer le réassort du buffet et anticiper les pics d’activité pour près de 800 petits-déjeuners par jour
  • Adapter la production aux besoins afin de limiter les ruptures et le gaspillage alimentaire
  • Veiller au respect des règles d’hygiène, de sécurité alimentaire et des procédures HACCP
  • Participer à la maîtrise des stocks et du Food Cost du petit-déjeuner
  • Organiser et accompagner le travail des commis et apprentis de votre secteur
  • Collaborer avec les équipes de cuisine et de salle afin de garantir la fluidité du service
  • Contribuer à l’amélioration continue de l’offre et à l’expérience client

Qualifications

Votre profil :

  • Vous disposez d’un CAP ou BAC professionnel cuisine
  • Expérience attestant d'un savoir-faire technique maîtrisé sur gros volume (400/600 couverts)
  • Maîtrise de l’anglais
  • Vous faites preuve d’esprit d’équipe et de leadership
  • Vous êtes réactif et justifiez d’une bonne gestion de stress
  • Le souci du client, la rigueur et l’organisation font partie intégrante de votre façon de travailler
