Tu es passionné(e) par la cuisine, tu aimes travailler en équipe et tu souhaites évoluer dans un environnement hôtelier dynamique ?

Le Novotel Paris la Défense Arena recherche son/sa futur(e) Second de Cuisine H/F/X pour accompagner le Chef de Cuisine et contribuer au bon fonctionnement de la brigade.

Notre établissement :

Situé à proximité de Paris, Le Novotel Paris la Défense Arena est un hôtel de 170 chambres, disposant également de 8 salles de séminaires, d’un restaurant et d’un bar.

Notre restaurant Papille propose une cuisine traditionnelle française, conviviale et de saison, avec une carte qui évolue au fil des produits et des inspirations de l’équipe.

L’activité restauration est variée : clientèle individuelle, groupes loisirs, et comprend également une importante activité banquet et séminaires, nécessitant de savoir s’adapter à différents volumes de production et de prestations : déjeuners, dîners, cocktails, pauses séminaires et événements.

Tu rejoindras une brigade à taille humaine et travailleras en binôme avec le Chef de Cuisine, et en étroite collaboration avec le service restauration, et le service commercial

Tes missions :

  • Organiser, coordonner et superviser le travail de la brigade ;
  • Participer à l’élaboration et au renouvellement de la carte du restaurant ;
  • Assurer la mise en place et la préparation des différents services ;
  • Réaliser et dresser les plats dans le respect des fiches techniques et des standards de qualité ;
  • Veiller à la régularité, à la qualité et à la présentation des préparations ;
  • Coordonner le travail de la cuisine avec les équipes du restaurant afin de garantir la fluidité du service ;
  • Veiller au respect des normes d’hygiène et de sécurité alimentaire, notamment HACCP ;
  • Participer à la gestion des stocks, aux inventaires et aux commandes de marchandises ;
  • Participer à l’élaboration des plannings et à l’organisation quotidienne de la brigade ;
  • Accompagner le Chef de Cuisine dans le management, l’intégration et la montée en compétences des collaborateurs ;

Qualifications

Le profil que nous recherchons :

Nous recherchons avant tout une personne professionnelle, dynamique et passionnée par son métier, qui souhaite s'investir durablement dans une équipe.

Tu disposes :

  • D’une expérience confirmée en tant que Chef de Partie, Second de Cuisine ou sur un poste similaire
  • D’une bonne maîtrise des techniques culinaires ;
  • D’une maîtrise des normes HACCP ;
  • D’une première expérience en management;
  • D’un bon sens de l’organisation et de la gestion des priorités ;
  • D’un véritable esprit d’équipe, d’une capacité à te remettre en question ;
  • D’une capacité à travailler efficacement dans un environnement où l’activité peut varier entre restauration à la carte et banquets
