RituAli, brand di Ali Professional specializzato nel settore Hospitality di Lusso, ricerca per un rinomato ristorante nel cuore del Quadrilatero della Moda di Milano un/una Chef de Partie Pasticceria.

Entrerai a far parte di una realtà della ristorazione milanese riconosciuta per la qualità della propria proposta gastronomica, con una cucina italiana contemporanea, una clientela internazionale e una brigata strutturata.

La pasticceria si sviluppa intorno a una carta snella, con preparazioni e presentazioni definite, che richiedono una buona padronanza tecnica e particolare attenzione alla qualità del risultato.

Cerchiamo una persona capace di gestire la propria partita con autonomia, organizzando la produzione e garantendo continuità nell'esecuzione, anche durante servizi con volumi importanti.

Requirements

Di cosa ti occuperai

  • Gestire autonomamente la partita di pasticceria, pianificando le preparazioni in funzione dei servizi.
  • Realizzare i dessert presenti in carta, assicurando precisione tecnica, cura delle presentazioni e costanza qualitativa.
  • Organizzare la mise en place e le attività di produzione, ottimizzando tempi e lavorazioni.
  • Collaborare con l'Executive Chef e il resto della brigata, contribuendo al regolare svolgimento del servizio.
  • Garantire ordine, pulizia e rispetto delle procedure HACCP.

Il profilo che cerchiamo

Ci rivolgiamo a professionisti che abbiano già maturato esperienza nella pasticceria di ristorazione e che siano in grado di seguire una partita con buona autonomia operativa.

In particolare:

  • Esperienza come Chef de Partie Pasticceria o in ruoli con responsabilità analoghe.
  • Solida conoscenza delle principali tecniche di pasticceria e delle preparazioni da ristorazione.
  • Capacità di organizzare il lavoro, gestire le priorità e rispettare i tempi del servizio.
  • Precisione, affidabilità e attenzione alla qualità del prodotto.
  • Attitudine al lavoro di squadra e capacità di inserirsi in una cucina con ritmi sostenuti.

Valutiamo con interesse anche percorsi maturati al di fuori del fine dining, purché accompagnati da una buona preparazione tecnica e da una reale autonomia nella gestione della produzione.

Cosa offriamo

  • Contratto: iniziale a tempo determinato, con concreta prospettiva di inserimento a tempo indeterminato.
  • Retribuzione: RAL compresa tra 25.000 € e 30.000 €
  • Trattamento economico aggiuntivo: prevista una componente variabile
  • Inquadramento: 4° livello CCNL Turismo.
  • Orario: full-time su turno unico, con possibilità di organizzazione nella fascia mattutina.
  • Organizzazione settimanale: ristorante chiuso la domenica e nei giorni festivi.
  • Ambiente di lavoro: brigata strutturata, processi di produzione organizzati e una proposta di pasticceria definita.
  • Sede: Milano Centro
