The posting

Xulo är en mexikansk restaurang i Stockholm med fokus på autentiska smaker, traditionella tekniker och matlagning från grunden. Vi arbetar bland annat med egen majsberedning och tortillas samt klassiska och moderna mexikanska rätter. Vi söker nu en erfaren kock som kan bli en viktig del av vårt köksteam. Tjänsten är framför allt förlagd till kvällar och helger och innebär att du ska kunna arbeta självständigt under service och ta ansvar för kvalitet, mise en place och organisation i köket. Arbetsuppgifter • Förberedelse och tillagning av mexikanska rätter • À la carte-service, främst kvällstid • Tillagning och hantering av bland annat tacos, pastor, birria, salsor och andra mexikanska förberedelser • Arbete med majs, tortillas och mexikanska råvaror • Mise en place och planering inför service • Egenkontroll, hygien och livsmedelssäkerhet • Kontroll av kvalitet och råvaror • Samarbete med köks- och serviceteamet • Bidra till en välorganiserad och effektiv köksdrift Vi söker dig som • Har dokumenterad erfarenhet av professionellt restaurangkök • Har mycket god kunskap om mexikansk matlagning, råvaror och smaker • Har erfarenhet av att arbeta under intensiv à la carte-service • Kan arbeta självständigt och ta ansvar under ett arbetspass • Är strukturerad, noggrann och kvalitetsmedveten • Kan arbeta kvällar och helger Erfarenhet av traditionell mexikansk matlagning, majsberedning, tortillas, pastor, birria och mexikanska salsor är starkt meriterande. Kunskaper i spanska är meriterande men inget krav.
