Resumen

El operario de cocimientos tiene la responsabilidad de realizar las actividades manuales de limpieza, muestreo, preparación y adición de materiales en las diferentes etapas del proceso. Realizar armados manuales para limpieza de equipos y tuberías, así como poner en produccion las diferentes actividades del área de cocimientos en coordinación con el tecnólogo y especialista, cumpliendo con la normatividad referente a los temas de seguridad, calidad e inocuidad alineados a los objetivos de la cervecería.

Responsabilidades

1 Gestión de seguridad, salud y medio ambiente • Cumple con los procedimientos de seguridad con la finalidad de reducir riesgos de accidentes y mantener los indicadores de seguridad en un proceso de mejora continua.

2 Gestión de la calidad • Mantener el orden y limpieza en su área de trabajo. • Realiza muestreos en diferentes etapas del proceso de produccion de mosto y manejo de materia prima, materiales auxiliares y sustancias químicas peligrosas para su inspección y análisis. • Aplicar los procedimientos de los diferentes sistemas de calidad, inocuidad, CTPAT según aplique en cada etapa del proceso de elaboración con la finalidad de mantener los estándares. • Informa de manera inmediata y precisa a su jefe directo sobre cualquier deficiencia o desviación relacionada con la seguridad, calidad o inocuidad que detecte durante el desarrollo de sus actividades, especialmente aquellas que puedan representar un riesgo para el personal, la infraestructura o el proceso operativo.

3 Gestión de la producción • Realiza las actividades asignadas, como la preparación y adición de materiales auxiliares entre otras, que garanticen el cumplimiento al programa de elaboración de mosto desde el recibo de materia prima, hasta el envío de mosto a Cuartos Frios, en base a los requerimientos de mostos programados por Cadena de Suministro. • Mantiene sus formatos actualizada durante el turno. • Realiza puntualmente la entrega de turno a su compañero entrante y/o jefe inmediato, informando de manera detallada sobre las tareas y objetivos que deben cumplirse durante el turno.

4 Gestión del mantenimiento • Mantiene en orden y limpieza los equipos y herramientas que utiliza. • Hace buen uso de sus equipos.

5 Gestión del personal • Se asegura de cumplir con el plan de formación (DNC) 6 Gestión del resultado • Se asegura de cumplir con las actividades asignadas en el plan de acción de los KPI´s que le apliquen, con el fin de mejorar el proceso.

7 Gestión de proyectos • Apoya en las diferentes actividades para lograr el avance de los proyectos de mejora continua.

8 Vive la visión • Promueve un ambiente de trabajo que es propio de los lineamientos esperados en el estándar de liderazgo • Apoya e invita a dar soporte a las actividades derivadas del comité de responsabilidad social • Reconoce al personal con los buenos resultados de los procesos

9 Cumple el marco legal y normativo • Implementa la estrategia para certificar y sostener el programa FSSC 22000 para la inocuidad alimentaria en el área de elaboración • Cumple con los lineamientos marcados por los sistemas de gestión de la cervecería
