Delaware North Australia is hiring a Chef de Cuisine to join our culinary team at the iconic Melbourne Cricket Ground (MCG). As Chef de Cuisine, you will lead our bustling kitchen operations, utilising your high-end culinary expertise to meet the demands of this diverse and vibrant environment. What you will do?

  • Oversee the daily operations of the kitchen
  • Deliver high-volume, premium dining to exceptional standards of quality and presentation
  • Develop innovative menu concepts that align with current food trends and guest preferences
  • Provide strong leadership, mentorship and hands-on training to foster a high-performing, motivated team
  • Set and uphold exceptional food standards through efficient systems and processes
  • Assist in managing department budgets, food costs, utilising IT systems to drive efficiency and profitability
  • Managing performance and labour costs for permanent and casual kitchen staff
  • Championing on-site food safety and HACCP accreditation

  • Proven experience managing high-volume premium dining
  • A strong track record of leading and inspiring diverse culinary teams
  • Expertise in menu development, stock management, and cost control
  • Strong commercial acumen with a track record of delivering business outcomes
  • Relevant culinary qualifications
  • Proficiency in business technology, including stock control systems, spreadsheets, and accounting software
  • Excellent communication and leadership skills, with the ability to engage at all levels
