The posting

Nous recherchons un aide-cuisinier expérimenté, maîtrisant la cuisine libanaise traditionnelle, pour seconder le cuisinier de l'établissement dans la production quotidienne de notre carte et tenir seul son poste en cuisine. Les tâches sont les suivantes :

  • Préparer, selon les recettes de la maison, les plats de la carte libanaise : mezzés froids et chauds et desserts.
  • Préparer et cuire les trois types de shawarma : marinade, montage de la broche, cuisson, découpe et service.
  • Réaliser les assaisonnements et mélanges d'épices propres à la cuisine libanaise (za'atar, sept-épices, sumac, taratour, marinades) selon les dosages de la maison, et en assurer la constance d'un service à l'autre.
  • Réaliser les préparations spécifiques de la maison : feuilles de vigne farcies, sfiha et pâtisseries orientales (shabiyat et nammoura).
  • Assurer la mise en place et les préparations préliminaires (légumes, sauces, garnitures), et participer aux cuissons et au dressage pendant les services.
  • Réceptionner et ranger les marchandises, et signaler au cuisinier les besoins de réapprovisionnement.
  • Appliquer les normes d'hygiène et de sécurité alimentaire (HACCP) et assurer l'entretien du poste de travail, du matériel et des ustensiles.
  • Travailler en collaboration avec le cuisinier, l'équipe de salle et le responsable de l'établissement.

Le profil idéal dispose de/d' :

  • Expérience professionnelle : aide-cuisinier expérimenté, avec 6 ans minimum d'expérience en cuisine libanaise.
  • Maîtrise effective de la cuisine libanaise, et en particulier de la préparation du shawarma et des assaisonnements traditionnels.
  • Formation en cuisine ou expérience équivalente attestée.
  • Connaissance des normes d'hygiène HACCP.
  • Capacité à travailler en équipe, de manière autonome, sous pression et en horaires coupés.
  • Langues : bonne connaissance de l'arabe ; la connaissance d'autres langues est un plus.

Nous offrons

  • Type de contrat : contrat à durée indéterminée.
  • Régime de travail : temps plein ¿ 38 heures par semaine.
  • Horaire : du lundi au jeudi de 9h-12h et 18h-21h ; vendredi et samedi de 8h-12h et 18h-21h.
  • Rémunération brute : selon le barème de la commission paritaire 302 (industrie hôtelière)
  • Avantages éventuels : 2 repas gratuits par jour
