The posting

Voor een karaktervolle horecalocatie in de regio Keerbergen zoeken we een chef/keukenverantwoordelijke die graag zelf aan het fornuis staat én de lijnen uitzet in de keuken.

Je neemt de dagelijkse keukenwerking in handen, stuurt een klein team aan en bewaakt kwaliteit, organisatie en rendement. De keuken is herkenbaar en kwaliteitsgericht, met goede producten, verzorgde borden en ruimte voor suggesties en seizoensgerechten.

Je werkt voltijds, 38 uur verdeeld over vier werkdagen tussen dinsdag en zondag. Gemiddeld verzorgt de keuken ongeveer 30 couverts, met pieken tot een zestigtal tijdens drukkere momenten en evenementen.

Takenpakket

  • Je organiseert de dagelijkse keukenwerking, mise-en-place en service
  • Je bereidt en presenteert zelf kwalitatieve en verzorgde gerechten
  • Je stuurt de souschef en eventuele extra keukenmedewerkers aan en bewaakt de werkverdeling
  • Je beheert bestellingen en stock en volgt foodcost, portionering, verspilling en rendement op
  • Je denkt mee over de kaart, suggesties en seizoensgerechten, steeds in overleg met het management
  • Je waakt over kwaliteit, HACCP, voedselveiligheid, hygiëne, orde en netheid

Must haves

  • Je hebt relevante ervaring als chef, souschef of in een vergelijkbare verantwoordelijke keukenfunctie
  • Je kunt een keuken zelfstandig organiseren en werkt tijdens de voorbereiding en service actief mee
  • Je hebt ervaring met bestellingen, stockbeheer en foodcost en bewaakt tegelijk kwaliteit en voedselveiligheid
  • Je kunt een klein keukenteam duidelijk aansturen en communiceert vlot in het Nederlands
  • Je neemt verantwoordelijkheid, bent betrouwbaar en stelt je flexibel op tijdens drukkere periodes en evenementen

  • Je hebt ervaring binnen een keuken waar rustige services en sterke piekmomenten elkaar afwisselen
  • Je denkt graag mee over kaarten, suggesties en seizoensgerechten
