Locatie Egmond aan Zee Een keukenbrigade van 30 collega's, honderden couverts per dag en bij grote evenementen soms een diner voor 1.500 gasten. Wij zoeken een Chef-kok die overzicht houdt, maar vooral ook graag tussen het team staat. Als Chef-kok bij Hotel Zuiderduin in Egmond aan Zee geef je leiding aan een grote en ervaren keukenbrigade. Je zorgt dat de dagelijkse service, dinerbuffetten, live cooking, congressen en dinnershows goed draaien. Je plant vooruit, verdeelt het werk en springt zelf bij wanneer het druk is. Maar we zoeken meer dan iemand die de keuken organiseert. We zoeken een chef die nieuwe ideeën meebrengt, graag samen met het team gerechten en buffetten ontwikkelt en collega's enthousiast krijgt om daar iets moois van te maken. Iemand die makkelijk contact maakt, duidelijk is als het nodig is en net zo makkelijk zelf de handen uit de mouwen steekt. Je werkt in een volledig vernieuwde keuken met moderne apparatuur en slimme werkplekken. De basis staat er. Nu zoeken we de Chef-kok die samen met de Executive Chef het team verder wil opbouwen. Wat ga je doen? - Je geeft leiding aan de keukenbrigade en werkt daarin nauw samen met de Souschef en Executive Chef. - Je stuurt de keukenbrigade aan tijdens de dagelijkse service, buffetten, congressen, dinnershows en evenementen tot 1.500 gasten. - Je werkt zelf mee in de keuken, bijvoorbeeld tijdens de voorbereiding, het buffet of een drukke service. - Je maakt de personeelsplanning en zorgt dat er per service voldoende mensen op de juiste plek staan. - Je proeft en controleert gerechten en stuurt bij op smaak, presentatie en kwaliteit. - Je begeleidt koks, leerlingen en stagiairs op de werkvloer en geeft directe feedback waar dat nodig is. - Je bestelt producten, controleert de voorraad en houdt foodcost en verspilling in de gaten. - Je zorgt dat het team werkt volgens de afspraken rondom HACCP, allergenen en veiligheid.
