Deine Rolle

Paris trifft Wien: Französische Klassiker treffen auf österreichische Küche - zeitgemäß und

lässig interpretiert. Du hast Erfahrung mit französischer und österreichischer Pâtisserie.

Du lebst, entwickelst und liebst diese Pâtisserie-Linie mit uns gemeinsam.

Konkret bist du für die Dessertentwicklung, Organisation und Führung des Patissier-Team verantwortlich.

Zur Produktion und Planung zählen sowohl das à la carte Dessertangebot im Restaurant Chez Bernard,

als auch die Stückdesserts für Motto Brot.

- Entwicklung neuer und saisonaler Dessertkreationen für Chez Bernard und Motto Brot

- Organisation und Steuerung der täglichen Produktion

- Herstellung von Desserts, Torten, Kuchen und Petits Fours

- Herstellung von Dekorationen aus Schokolade, Zucker und Marzipan

- Planung, Produktion und Ausfertigung von Sonderbestellungen

- Anwendung moderner und klassischer Pâtisserie-Techniken

- Anleitung und Schulung von Chefs de Partie, Demi Chefs de Partie und Praktikant_innen

- Organisation von Mise en Place, Produktionsplanung, Warenbestellung und Lagerkontrolle

- Kalkulation von Verkaufspreisen

- Erstellung und Dokumentation von Rezepturen

- Erstellung der Dienstpläne für das Pâtisserie-Team

- Einhaltung und Kontrolle der HACCP- und Hygienestandards

- Kontrolle der Rezepturen, Portionierungen und Qualitätsstandards

- Nachhaltiger Umgang mit Ressourcen sowie die Vermeidung von Lebensmittelverschwendung

- Du bringst mehrjährige Erfahrung in der Top-Pâtisserie mit und hast idealerweise bereits

Verantwortung in einer vergleichbaren Position übernommen

- Hochwertige Pâtisserie ist deine Leidenschaft - du liebst es, mit Qualität, Kreativität und

einem sicheren Gespür für Geschmack und Optik zu arbeiten

- Du hast Freude daran, eigene Ideen einzubringen und Neues zu entwickeln, ohne dabei

unsere Qualitätsstandards aus den Augen zu verlieren

- Organisationstalent, Verantwortungsbewusstsein und eine strukturierte Arbeitsweise

gehören für dich ganz selbstverständlich dazu

- Du führst dein Team mit Klarheit, Wertschätzung und Freude und hast ein gutes Gespür dafür,
