Vos responsabilités

Pilotage de la cuisine et exécution des services

  • Assurer le bon déroulement des services et garantir une exécution irréprochable en termes de qualité, régularité, rapidité et présentation des plats.
  • Superviser et participer à la production chaude et froide en veillant au respect des standards de l’établissement.
  • Organiser la mise en place, anticiper les volumes et adapter les priorités en fonction de l’activité.
  • Veiller à la fluidité du service entre la cuisine et la salle.

Encadrement et animation de l’équipe cuisine

  • Encadrer, organiser et accompagner l’équipe cuisine au quotidien.
  • Donner un cadre de travail clair, répartir les tâches, fixer les priorités et assurer le bon niveau d’exigence opérationnelle.
  • Participer à l’intégration, à la formation et à la montée en compétence des collaborateurs.
  • Favoriser un esprit d’équipe constructif, exigeant et respectueux.

Organisation, gestion et amélioration continue

  • Structurer l’organisation de la cuisine afin de garantir efficacité, fluidité et constance dans l’exécution.
  • Identifier les points d’amélioration dans les méthodes de travail, l’organisation du service et la gestion de la production.
  • Être force de proposition pour faire évoluer l’organisation, les pratiques et, le cas échéant, l’offre.

Gestion des stocks, marchandises et coûts

  • Participer à la gestion des commandes, des stocks et des approvisionnements.
  • Contrôler les livraisons et la conformité des marchandises.
  • Veiller à la bonne utilisation des matières premières, à la limitation des pertes et à la maîtrise des coûts.
  • Contribuer à une gestion rigoureuse de la cuisine, dans une logique de performance durable.

Hygiène, sécurité et respect des standards

  • Garantir le respect strict des normes d’hygiène, de sécurité alimentaire et de propreté en cuisine.
  • Veiller à l’application rigoureuse des procédures HACCP et des standards internes.
  • Être exemplaire sur la tenue du poste, l’entretien du matériel et la discipline opérationnelle.

Votre profil

Vous disposez d’une expérience confirmée comme Chef de cuisine ou Sous-chef expérimenté, idéalement dans un environnement de brasserie, restauration traditionnelle ou établissement à volume.

Vous êtes reconnu pour :

  • votre solide maîtrise des techniques culinaires ;
  • votre capacité à tenir un service avec exigence et sang-froid, même dans un rythme soutenu ;
  • votre sens de l’organisation, votre capacité à structurer et à anticiper ;
  • votre leadership de terrain et votre aptitude à faire travailler une équipe avec clarté et exigence ;
  • votre rigueur dans l’application des standards, de l’hygiène et de la sécurité alimentaire ;
  • votre sens des responsabilités, votre fiabilité et votre implication ;
  • votre volonté de contribuer concrètement à la qualité de l’établissement et à son bon fonctionnement au quotidien.

Une expérience dans une fonction similaire est indispensable.
