Ervaren Chef de Partie – professionele restaurantkeuken

Functieomschrijving:

Voor onze restaurantkeuken zijn wij op zoek naar een ervaren Chef de Partie die zelfstandig verantwoordelijkheid kan dragen voor een eigen partie en onmiddellijk operationeel inzetbaar is binnen een professionele à-la-cartekeuken.

Als Chef de Partie sta je in voor de volledige organisatie, voorbereiding en uitvoering van de werkzaamheden binnen de aan jou toegewezen keukenpost. Je werkt nauw samen met de chef en de overige leden van het keukenteam en bent mee verantwoordelijk voor een kwalitatieve, efficiënte en vlotte service.

Je taken omvatten onder andere:

  • zelfstandig organiseren en beheren van een toegewezen partie;
  • uitvoeren en controleren van de volledige mise-en-place;
  • voorbereiden, bereiden, afwerken en dresseren van warme en koude gerechten;
  • zelfstandig uitvoeren van gerechten tijdens drukke à-la-carteservices;
  • gelijktijdig verwerken en correct timen van meerdere bestellingen;
  • bewaken van smaak, presentatie, portionering en constante kwaliteit;
  • controleren van ingrediënten op kwaliteit, versheid en houdbaarheid;
  • correct bewaren, labelen en roteren van producten;
  • beheren en tijdig aanvullen van de werkvoorraad van de eigen partie;
  • beperken van voedselverlies en efficiënt omgaan met grondstoffen;
  • naleven van de geldende hygiëne-, voedselveiligheids- en HACCP-voorschriften;
  • correct omgaan met allergenen en specifieke dieetvereisten;
  • onderhouden van een propere, veilige en georganiseerde werkpost;
  • samenwerken met de chef en andere keukenmedewerkers om een vlotte service te garanderen;
  • ondersteunen en begeleiden van minder ervaren keukenmedewerkers waar nodig.

Profiel:

Dit betreft geen startersfunctie. Wij zoeken een ervaren kok die reeds zelfstandig binnen een professionele restaurantkeuken heeft gewerkt.

  • Wij verwachten: meerdere jaren aantoonbare professionele ervaring in restaurantkeukens; aantoonbare ervaring als Chef de Partie of in een hogere keukenfunctie; ervaring met het zelfstandig beheren van een partie; grondige kennis van professionele kook- en bereidingstechnieken; ervaring met professionele à-la-carteservice; goede productkennis; kennis van HACCP, voedselveiligheid en professionele hygiëne; zelfstandig, georganiseerd, nauwkeurig en stressbestendig kunnen werken; flexibiliteit voor avond-, weekend- en feestdagwerk. Een diploma/getuigschrift in professionele keuken, gastronomie, hotelschool of gelijkwaardige culinaire beroepsopleiding is gewenst. Gelijkwaardige vakbekwaamheid kan worden aangetoond door relevante beroepservaring. Kandidaten kunnen worden gevraagd hun relevante ervaring te staven aan de hand van een gedetailleerd CV, diploma's/opleidingsbewijzen, tewerkstellingsattesten en professionele referenties. Aanbod Voltijds contract binnen PC 302 Horeca. Variabel uurrooster met avond-, weekend- en feestdagwerk volgens de planning en werking van het restaurant.
