Nog één laatste blik in de spiegel en je gaat op pad. Je begint je dienst met een overdracht en maakt een duidelijk plan voor de dag. Je verzorgt de mise-en-place, bereidt speciale gelegenheden voor gasten voor en weet precies wat je te wachten staat.
