Als Head Chef geef jij samen met je team richting aan de keuken. Je krijgt veel ruimte voor creativiteit en verantwoordelijkheid en hebt direct invloed op de culinaire beleving van onze gasten. The Lobby is onderdeel van Hotel V en van een informele, ambitieuze hotelgroep. Je werkt in een open en professionele keuken, bent betrokken bij de gasten en krijgt de ruimte om jouw ideeën in de praktijk te brengen. Je rapporteert rechtstreeks aan de Head of Operations en werkt nauw samen met de verschillende teams binnen Hotel V. Je ontwikkelt gerechten en menu's, maakt recepten inclusief kostprijsberekeningen en houdt grip op foodcosts, inkoop en waste. Je maakt inkoopplannen, plaatst bestellingen en onderhoudt goede relaties met leveranciers. Tegelijkertijd zorg je ervoor dat je team het beste uit zichzelf kan halen, met ruimte om te leren, verantwoordelijkheid te nemen en plezier te hebben in het vak. Want uiteindelijk draait het om één ding: gasten die genieten van het eten, de service en de sfeer - en graag terugkomen. Wat je gaat doen: - Gasten blij maken met goed eten en persoonlijke service, zodat ze graag terugkomen; - Samen met je team de culinaire koers van The Lobby bepalen; - Nieuwe gerechten en menu's ontwikkelen en recepturen maken, inclusief kostprijsberekeningen; - Inkoopplannen maken, bestellingen plaatsen en relaties met leveranciers onderhouden; - Foodcosts bewaken en voedselverspilling tot een minimum beperken; - Je team aansturen, inspireren en helpen groeien in hun vak; - Zorgen...
