Arbeitsbeginn: Beschäftigung ab sofort

Unsere Anforderungen an Dich:

* Abgeschlossene Berufsausbildung als Koch/Köchin (oder vergleichbare gastronomische Ausbildung)

Mehrjährige Berufserfahrung in der gehobenen Gastronomie oder Hotellerie

* Idealerweise bereits Erfahrung als Chef de Partie, Souschef*in oder in einer vergleichbaren Vertretungsfunktion

* Erfahrung mit Cook & Chill- und/oder Cook & Freeze-Verfahren von Vorteil

* Sicherer Umgang mit verschiedenen Gartechniken und Zubereitungsmethoden

* Kenntnisse in HACCP-Richtlinien und Lebensmittelhygiene

* Grundverständnis für Warenwirtschaft und Lagerhaltung

* Erste Erfahrung in Personalführung oder Teamkoordination von Vorteil

* Affinität für digitale Arbeitsprozesse und moderne Küchentechnik

Deine Aufgaben

* Durchführung der Mise en Place und strukturierten Vorproduktion nach Cook & Chill- bzw. Cook & Freeze-Verfahren für alle Küchenbereiche an den Prozessküchentagen (3 Tage/Woche)

* Portionierung, Beschriftung und fachgerechte Lagerung vorbereiteter Speisen und Komponenten unter Einhaltung der HACCP-Standards

* Bedienung moderner Küchentechnik und digitaler Systeme zur Prozesssteuerung

* Sicherstellung gleichbleibend hoher Qualität, Frische und Portionsgenauigkeit der Vorbereitungsarbeiten

* Enge Abstimmung mit Küchenchef*in und Souschef*in zur bedarfsgerechten Planung der Vorbereitung

* Flexible Vertretung der Position Küchenchef*in / Souschef*in bei Abwesenheit (2 Tage/Woche), inklusive Führung und Organisation des laufenden Küchenbetriebs

* Anleitung, Koordination und Qualitätskontrolle des Küchenteams während der Vertretungstage

* Einhaltung von Sauberkeit, Ordnung und Hygienerichtlinien im gesamten Küchenbereich
