The posting

Het doel van de functie mise-en-place kok bij Brasserie Ambassade is om ervoor te zorgen dat onze keuken iedere dag goed voorbereid aan de slag kan. Je werkt voornamelijk overdag en bent verantwoordelijk voor een groot deel van de mise-en-place voor onze keuken. Daarnaast ondersteun je het ontbijt- en lunchteam waar nodig. Je zorgt ervoor dat ingrediënten en voorbereidingen op tijd klaarstaan, werkt netjes en gestructureerd en draagt bij aan de constante kwaliteit van onze gerechten. Je bent daarmee een belangrijke schakel binnen het keukenteam en zorgt er samen met je collega's voor dat de service soepel kan verlopen.

Functie-eisen: Dagelijkse werkzaamheden • Mise-en-place: Voorbereiden, verwerken en organiseren van ingrediënten en producten voor de verschillende onderdelen van de keuken. • Ondersteuning ontbijt: Helpen met de voorbereidingen en werkzaamheden rondom het ontbijt en ontbijtbuffet. • Ondersteuning lunch: Ondersteunen van het keukenteam tijdens de lunchservice en waar nodig zelfstandig oppakken van werkzaamheden. • Voorbereiding keuken: Zorgen dat het keuken- en serviceteam goed voorbereid aan de dag en volgende service kan beginnen. • Kwaliteitscontrole: Controleren van producten en bereidingen op kwaliteit, smaak, versheid en presentatie. • Voorraad: Signaleren wanneer producten moeten worden aangevuld en zorgen voor een nette en overzichtelijke opslag. • Hygiëne: Zorgdragen voor een schone en georganiseerde werkplek en werken volgens de geldende HACCP-richtlijnen. Teamwerk en samenwerking • Je werkt nauw samen met het ontbijt- en lunchteam en ondersteunt collega's waar dat nodig is. • Je deelt jouw kennis en ervaring met collega's en staat ervoor open om zelf nieuwe dingen te leren. • Je communiceert goed met de rest van het keukenteam over de mise-en-place, voorraad en bijzonderheden. • Je bent iemand op wie het team kan bouwen en die ziet wat er moet gebeuren.
