The Seafood Bar logo Nederlands nl The Seafood Bar logo Productie Manager Restaurants - Op locatie - - Amsterdam - € 3.000 - € 4.000 per maand - Amsterdam - The Seafood Bar Functieomschrijving Als Head Chef van de productiekeuken ben jij verantwoordelijk voor de dagelijkse aansturing van alles wat richting 5 Seafood Bar restaurants en House of Noa (Japanse keuken) gaat, en zorg je dat alles vóór de service klopt, elke dag opnieuw. Je vertaalt de behoeften van de verschillende locaties naar een efficiënte en strak georganiseerde werkwijze. Je werkt in dagdiensten (maandag t/m zaterdag) van ongeveer 07:00 / 08:00 tot 15:00. Je geeft leiding aan een team van circa 4-6 medewerkers en bent verantwoordelijk voor een duidelijke planning, consistente kwaliteit en een gestroomlijnde workflow. Je bewaakt processen, kosten en timing en zorgt dat de output dagelijks aansluit op de vraag vanuit de restaurants. Je schakelt intensief met de Head Chefs van de locaties en stemt volumes en prioriteiten nauwkeurig af. Daarbij houd je zicht op wat er op de vloer gebeurt en stuur je bij waar nodig.Daarnaast ben je eens in de zoveel tijd op locatie aanwezig om te signaleren wat beter kan. Vereisten Jouw verantwoordelijkheden: - Opzetten van de productiekeuken in samenwerking met eigenaren en de Executive Chef - Organiseren en aansturen van de dagelijkse productie - Opstellen van roosters en planning - Waarborgen van kwaliteit, hygiëne en HACCP-processen - Afstemmen van productie en leveringen per locatie - Beheren van food cost, waste en efficiëntie - Optimaliseren van processen en werkwijze Je bent daarnaast eens in de zoveel tijd aanwezig op locatie om feeling te houden met de operatie en continu te kunnen verbeteren.
