The posting

Tatemado is een nieuw restaurant in Oostende op zoek naar een sous chef/kok. Het restaurant viert de Mexicaanse keuken op haar hoogste niveau. Geen fusionkeuken, geen folkloristische aankleding; wel de diepgang, complexiteit en verfijning die de Mexicaanse culinaire traditie verdient. Het concept is geworteld in een jarenlange, persoonlijke band met de Mexicaanse eetcultuur, ambacht en tradities.

JOUW ROL

Als Sous Chef/kok ben je de rechterhand van onze Head Chef. Samen ontwikkelen en verfijnen jullie het menu, en jij zorgt ervoor dat de uitvoering op elk station klopt: elke service opnieuw. Dit is geen bestaande brigade waar je gewoon instapt. Je bouwt mee aan een keuken van nul: de werkwijze, de standaarden, de identiteit.

WAT GA JE DOEN

Actief meewerken aan menuontwikkeling: gerechten, technieken, presentatie

De dagelijkse keukenoperatie coördineren en de consistentie bewaken over alle posten

Kwaliteit, hygiëne en organisatie op het hoogste niveau houden

Meedenken over de inkoop van authentieke ingrediënten en het opbouwen van leveranciersrelaties

De keuken runnen in afwezigheid van de chef, zonder kwaliteitsverlies

Bijdragen aan receptontwikkeling, R&D en seizoensgebonden vernieuwing

JOUW PROFIEL

Minstens 2 jaar ervaring in een fine dining keuken

Affiniteit met of interesse voor de Mexicaanse keuken: ervaring is een pluspunt, maar we leiden de juiste persoon graag op

Creatief ingesteld: je denkt verder dan het recept, over smaak, textuur en presentatie

Gedisciplineerd en consistent: je mise en place is onberispelijk, elke service

Je kunt een team rustig en doeltreffend aansturen, ook onder druk

Je spreekt vloeiend Nederlands en Engels

Je hebt een geldige werkvergunning voor België
