Ons doel is helder: het beste visrestaurant van Noord-Holland worden. Jouw rol? Als Zelfstandig Werkend Kok met de focus op productie en mise-en-place ben jij de motor van onze keuken. Jij zorgt dat de voorbereiding in de ochtenden strak staat, zodat de service 's middags en 's avonds vlekkeloos verloopt. Je werkt nauw samen met de Chef en Souschef, legt de basis voor onze dagverse visgerechten en staat op zaterdag zelf midden in de actie. Jouw werkschema: - 3 ochtenddiensten: Maandag, woensdag en vrijdag (focus op voorbereiding, vis fileren, sauzen maken, mise-en-place en goederenontvangst). - 1 servicedienst: Zaterdag een volle dag meedraaien tijdens de lunch en het diner. - Vaste vrije dagen: Dinsdag, donderdag en zondag ( of in overleg te bepalen). Jouw taken: - Mise-en-Place & Productie: Het zelfstandig voorbereiden van de dagverse ingrediënten, vis- en vleesgerechten, sauzen en garnituren. - Kwaliteit & Versheid: Eerste aanspreekpunt voor de ontvangst en controle van dagverse ingrediënten en vissen. - Service op zaterdag: Het draaien van de lunch- en dinerservice samen met het team op een van onze drukste dagen. - Kwaliteit & Hygiëne: Toezien op de naleving van de HACCP-richtlijnen en zorgen voor een schone, georganiseerde werkomgeving. - Voorraadbeheer: Zorgen dat de mise-en-place lijsten op orde zijn en de nodige bestellingen tijdig worden doorgegeven.
