The posting

Restaurant Nam Kee Gelderlandplein, een authentiek Chinees specialiteiten restaurant, gevestigd in het winkelcentrum Gelderlandplein in Amsterdam Zuid, is op zoek naar een zelfstandig werkend kok ter versterking van ons keukenteam. Ben je kok, is jouw passie in de keuken maar beschik je over een mbo niveau 2 werk- en denkniveau, dan nodigen we je ook uit om te solliciteren bij ons. Je krijgt een goede begeleiding tijdens de inwerkperiode en volop mogelijkheden jezelf verder te ontwikkelen in de keuken. Als zelfstandig werkend kok ben je verantwoordelijk voor de voorbereiding en opmaak van gerechten en gerecht-delen. Je werkt onder leiding van de chef-kok of sous-chef terwijl je de keuken ook zelfstandig draaiende weet te houden. Verder werk je samen met collega-koks en stuur je als nodig de keukenhulp aan. Onder vaste instructies m.b.t. ingredienten, recepturen, werkwijzen en uiterlijke presentaties ga je aan het werk. Je taken zijn: - Selecteren ingredienten, voorbereiden (wassen, snijden, mengen e.d.) en bereiden van gerechten volgens receptuur - Uitvoeren van tussentijdse controles (gaarheid, smaak, kleur e.d.) en bijsturen waar nodig - Zorgen voor consistente kwaliteit en hygiëne - Coordineren en aansturen van (hulp)koks en keukenpersoneel - Bijhouden van voorraden, bestellen van ingredienten en controleren van leveringen - Schoonmaken van de werkomgeving en keukenapparatuur dagelijks volgens de Haccp hygiene regels - Melden van technische mankementen en oplossen van eenvoudige storingen - Leveren van input m.b.t. de samenstelling, wijziging/vernieuwing van de menukaart en werkmethoden.
