Planejar e formular cardápios gerais e de dieta; supervisionar e orientar a produção de refeições, desde a aquisição do gênero alimentício até o produto final e avaliar os resultados obtidos; realizar treinamento para o aprimoramento dos colaboradores para melhor atuação e garantia da segurança alimentar.Responsabilidades e atribuiçõesPlanejar cardápios gerais e dietas especiais, acompanhando as atividades de pré-preparo, preparo e distribuição das refeições;Orientar a melhor forma para obtenção de uma alimentação saudável dentro dos padrões higiênico-sanitário;Elaborar previsão de consumo periódico de gêneros alimentícios perecíveis e realizar pedido de compras, visando atender as necessidades das refeições da instituição;Supervisionar o recebimento e estocagem de gêneros alimentícios e materiais adquiridos junto ao Estoquista, observando as características dos produtos, a temperatura ideal de armazenamento para os perecíveis, visando atender as normas da Vigilância Sanitária e garantir a qualidade dos mesmos;Orientar e supervisionar a equipe de Cozinheiros e auxiliares de cozinha, quanto ao preparo das refeições, o processo de cocção de alimentos; Supervisionar a distribuição das refeições no refeitório do hospital, orientando a equipe para a reposição de itens, bem como analisar sua aceitação para servir de base para os próximos cardápios. Providenciar relatórios contendo o número de refeições fornecidas durante o mês, visando adequar as quantidades, custo diário das refeições e requisição de mercadorias. Garantir o cumprimento de todas as atividades do setor, de acordo com as normas estabelecidas pela Vigilância Sanitária. Providenciar os consertos e reposições de materiais e equipamentos do setor, de forma a não impactar nos trabalhos a serem realizados. Colaborar no treinamento e formação de profissionais da área, acompanhando os trabalhos realizados e prestando toda orientação necessária. Solicitar cotação de preço de gêneros alimentícios junto aos fornecedores, visando a obtenção de produtos com maior qualidade e menor preço. Coordenar as atividades de higienização de ambientes, equipamentos e utensílios, averiguando todo o processo com base nas normas higiênico-sanitárias, bem como realizar escalas de higienização; Participar de plantões nos finais de semana, supervisionando o atendimento nutricional dos pacientes e realizando tarefas similares as já descritas. Desenvolver outras atividades, conforme necessidade, ou a critério de seu superior. Requisitos e qualificaçõesEnsino superior completo em Nutrição;Desejável capacitação em nutrição voltada para produção;Conhecimento em Informática nível usuário;CRN ativo.
