Обязанности: Управление производством и торговым залом Контроль технологического процесса: Обеспечение соблюдения рецептур, технологических карт и стандартов приготовления блюд. Проведение бракеражей: Ежедневная оценка качества готовой продукции, контроль сроков годности и условий хранения (товарное соседство). Коммерческая деятельность и экономика Выполнение плановых показателей: Достижение целей по выручке, среднему чеку и прибыли. Инвентаризация: Проведение ревизий товаров и тары, выявление и анализ потерь, списание просроченной продукции (минимизация списаний). Работа с остатками: Управление персоналом Подбор и адаптация: Участие в найме поваров, пекарей, продавцов, кассиров и техперсонала. Обучение и мотивация: Проведение тренингов по стандартам сервиса, знанию продукта и технике продаж. Контроль соблюдения санитарной гигиены персоналом. Составление графиков: Контроль рабочего времени (табель). Клиентский сервис и мерчандайзинг Стандарты сервиса: Контроль качества обслуживания посетителей, скорость работы на кассе и в зоне выдачи заказов. Визуальный мерчандайзинг: Обеспечение привлекательной выкладки товаров (особенно в витринах кулинарии), поддержание чистоты и порядка в торговом зале. Работа с обратной связью: Разрешение конфликтных ситуаций с покупателями, анализ отзывов и предложений. Санитарные нормы и безопасность Соблюдение СанПиН: Контроль за уборкой помещений, дезинфекцией инвентаря, наличием медицинских книжек у сотрудников. Безопасность продукции: Обеспечение правильной работы холодильного оборудования, ведение журналов температурного режима. Охрана труда: Соблюдение техники безопасности сотрудниками при работе с оборудованием Хозяйственная деятельность и отчетность Управление запасами: Своевременный заказ продуктов, упаковки и расходных материалов, контроль их поступления. Работа с оборудованием: Отслеживание исправности технологического и холодильного оборудования, своевременный вызов ремонтных служб. Ведение отчетности: Сбор и анализ данных по продажам, подготовка отчетов для вышестоящего руководства.

Требования: Знание технологии производства продуктов питания. Навыки управления коллективом от 5 до 20+ человек. Понимание 1С (или аналогичных товароучетных систем). Ориентация на высокое качество и свежесть продукции. Знание специфики работы продуктового магазина с кондитерским ассортиментом Понимание стандартов обслуживания Стрессоустойчивость и эмоциональная стабильность Условия: график работы 5\2 дружный коллектив своевременная/стабильная выплата заработной платы работа в стабильной, развивающейся компании
