Входной контроль: проверка сопроводительных документов, органолептическая оценка сырья, контроль веса, целостности упаковки и условий хранения на складе. Контроль производства: соблюдение рецептур и технологических инструкций, контроль массы тестовых заготовок и готовой продукции, мониторинг температурных и технологических параметров. Органолептическая оценка готовых изделий. Санитарный контроль: проверка состояния оборудования, инвентаря, тары, контроль процессов мойки и применения моющих/дезинфицирующих средств. Документирование: ведение журналов контроля качества, оформление актов брака и несоответствий, подготовка еженедельных отчётов для руководителя. Реагирование на отклонения: оперативное информирование руководства, приостановка отгрузки/выработки при угрозе безопасности, взаимодействие со смежными службами по устранению нарушений. Внешние процессы: участие в подготовке к проверкам надзорных органов, взаимодействие с аккредитованной лабораторией при отборе проб, работа с поставщиками по актам несоответствий.

Опыт работы на пищевом производстве от 1 года (контролёр качества, лаборант, технолог или смежная роль). Знание нормативной базы: ТР ТС 021/2011 О безопасности пищевой продукции, профильные СанПиН, принципы ХАССП. Уверенный пользователь ПК. Наличие действующей медицинской книжки или готовность оформить в короткий срок. Образование: среднее профессиональное или высшее в области пищевых технологий, хлебопечения или лабораторного анализа (рассматриваем кандидатов с релевантным практическим опытом в приоритете). Личные качества: внимательность к деталям, ответственность, дисциплинированность, стрессоустойчивость, умение аргументированно отстаивать требования качества и выстраивать диалог без конфликтов.
