Заведующий столовой выполняет следующие обязанности: 3.1. В рамках трудовой функции управления текущей деятельностью сотрудников производственной службы: планирует потребности производственной службы столовой в материальных ресурсах и персона ле; проводит инструктажи персонала пищеблока школьной столовой по технологии приготовления пищи и другим производственным вопросам. разрабатывает планы основного производства по отдельным видам процессов; оценивает факторы, влияющие на процессы основного производства школьной столовой; проводит. 3.2. В рамках трудовой функции организации и координации процессов основного производства школьной столовой: проводит организационную диагностику, проектирование и регламентацию процессов основного производства столовой школы; осуществляет расстановку поваров и других работников школьной столовой, составляет графики выхода их на работу; распределяет производственные задания между поварами школьной столовой в зависимости от их специализации и определения степени ответственности; осуществляет координацию процессов производства пищи на пищеблоке столовой школы с по ставками продуктов и их хранением; обеспечивает своевременное, согласно режиму школы, высококачественное приготовление про дукции собственного производства требуемого ассортимента и качества для учащихся и работ ников; составляет заявки на необходимые продовольственные товары, полуфабрикаты и сырье, обеспе чивает их своевременное приобретение и получение с баз и со складов, контролирует ассорти мент, количество и сроки поступления и реализации; составляет меню и обеспечивает разнообразие ассортимента блюд и кулинарных изделий; проводит работу по совершенствованию организации производственного процесса, внедрению прогрессивной технологии, эффективному использованию оборудования, повышению професси онального мастерства работников школьной столовой, в целях повышения качества приготовля емых блюд.

Заведующий столовой школы должен знать: нормативные правовые акты Российской Федерации, регулирующие деятельность заведения; основы трудового законодательства Российской Федерации; основы организации деятельности столовой; основы организации, планирования и контроля деятельности подчиненных; теории мотивации персонала и его психологические особенности; специализированные информационные программы и технологии, используемые в работе производственной службы; требования трудовой дисциплины заведения, норм и требований охраны труда, санитарии и гигиены; теорию межличностного и делового общения, переговоров, конфликтологии малой группы.
