Проводить ветеринарный осмотр животных и ветеринарно-санитарную экспертизу пищевой продукции (мяса и мясопродуктов, птицы) на основании действующих норм и правил; Проводить послеубойный осмотр туш и органов, ветсанэкспертизу мясных туш на трихинеллёз и другие гельминтозы; отбирать пробы продукции и направлять их на лабораторные исследования. Осуществлять ветеринарно-санитарный контроль сырья и продукции животного происхождения при заготовке, хранении, переработке и реализации; проверять сопроводительные документы на подконтрольные товары и оформлять ветеринарные документы установленного порядка (в том числе электронные через ФГИС Меркурий ). Проверять выполнение ветеринарных и санитарных требований на предприятиях по заготовке, хранению и переработке продукции животного происхождения; контролировать содержание помещений, условий ветеринарно-санитарной обработки сырья и оборудования. Принимать участие в расследовании причин убоя животных и заболеваний, выявленных при экспертизе; при выявлении продукции, не соответствующей требованиям безопасности, запрещать её реализацию и использовать или утилизировать её в установленном порядке. Вести установленную ветеринарную отчётность и документацию (журналы ветсанэкспертизы, регистрации результатов осмотра животных и продукции, записи в ФГИС Меркурий и Цербер ).
