2. Должностные функции и обязанности.2.1. На кухонного рабочего возлагается функции своевременных подготовительных работ для приготовления пищи, в соответствии с распорядком учреждения, а так же обеспечения доброкачественной уборки помещений пищеблока.2.2. Для выполнения возложенных на него функций кухонный рабочий обязан: 2.2.1. Прибыть на рабочее место за 15 мин до начала рабочего дня, без хозяйственных сумок и пакетов.2.2.2. Пройти на рабочее место, сделав соответствующею отметку в журнале Учет рабочего времени . Снять верхнюю одежду, обувь, головной убор, личные вещи в гардеробной пищеблока.2.2.3. Снимать ювелирные украшения, часы и другие бьющиеся предметы, коротко стричь ногти и не покрывать их лаком, не застегивать спецодежду булавками.2.2.4. Перед началом работы тщательно мыть руки с мылом, надевать чистую санитарную одежду, подбирать волосы под колпак или косынку.2.2.5. Работать в чистой санитарной одежде, менять ее по мере загрязнения.2.2.6. При посещении туалета снимать санитарную одежду в специально отведенном месте, после посещения туалета тщательно мыть руки с мылом.2.2.7. При появлении признаков простудного заболевания или кишечной дисфункции, а также нагноений, порезов, ожогов сообщать администрации и обращаться в медицинское учреждение для лечения.2.2.8. Отвечает за санитарное состояние своего рабочего места и строго соблюдает правила личной гигиены.2.2.9. Проверяет перед началом работы санитарное состояние посуды и оборудования. 2.2.10. Своевременно информирует руководителя службы по организации питания обо всех недостатках, выявленных при приготовлении пищи, о необходимости ремонта оборудования, посуды и инвентаря, находящегося в его ведении. 2.2.11. Проводит влажную уборку территории пищеблока, всех столов, электроплит в соответствии с требованиями по содержанию пищеблока в учреждения.

1.3. Кухонный рабочий должен знать: наименование кухонной посуды, инвентаря, инструмента и их назначение; правила и способы вскрытия тары, консервных банок, откупорки бочек; правила перемещения продуктов и готовой продукции на производстве; правила включения и выключения электрокотлов, электроплит, электрошкафов, электрокипятильников и других видов теплового оборудования; правила растопки плит, работающих на твердом и жидком топливе.
