Сыродел выполняет следующие должностные обязанности: 1. Обеспечивает бесперебойное выполнение участком сменных плановых заданий по выпуску продукции высокого качества и в установленные сроки согласно графику производства. 2.Следит за правильностью заполнения и ведения: - электронных технологических журналов участка производства крафтовых сыров: - чек листов установленного формата ООО Сыры Кубани; - заполняет технологический рапорт выработки, рапорт фасовки. Контролирует и осуществляет санитарную уборку участка. Производит ручную мойку оборудования, технологического инвентаря, форм и рабочего места перед началом работы и по ее окончании. Подготавливает оборудование для отбора на смывы микробиологам. Осуществляет руководство ведением полного цикла производства сыра (варка, формовка, посолка, созревание, покрытие латексом, фасовка сыра) согласно РИ-Крафт-001, памяткам и указаниям. Транслирует данные в рабочей группе. Готовит рабочие растворы ингредиентов с оформлением идентификационных ярлыков с указанием даты приготовления, ФИО, концентрации. Производит и контролирует процесс копчения. Проводит санитарию помещения коптилен и самих коптилен. 7.Осуществляет фасовку продукции в соответствии с требованиями нормативной документации, регламентами, рабочими инструкциями, указаниями и сменного задания, полученного от ведущего специалиста. Контролирует герметичность, маркировку, внешний вид готовой продукции методом визуального осмотра при фасовке.
