Выполнение работ на отдельных простейших операциях при убое и перерабатывании свиней, крупного и мелкого рогатого скота; наклеивание бумажного ветеринарного номера на тушу, голову и ливер всех видов скота; снятие цепей со шкур скота после механической съемки шкур и подача их к месту фиксации,заточка и правка ножей. - Выполнение работ на отдельных простых операциях при убое и перерабатывании свиней, крупного и мелкого рогатого скота. - Подгон скота к боксу или месту оглушения. - Фиксация цепью шкур скота при механической съемке. - Включение и опробование механизмов в работе. - Выполнение работ на отдельных операциях средней сложности при убое и перерабатывании свиней, крупного и мелкого рогатого скота. - Оглушение, наложение путовых цепей и подъем оглушенного животного с помощью подъемных механизмов на путь обескровливания. - Разборка внутренностей крупного рогатого скота на конвейере в убойном цехе. - Опиливание или обрубка рогов у крупного и мелкого рогатого скота

1. Медицинские требования Прохождение медосмотра. Забойщик обязательно должен регулярно проходить медицинский осмотр. О результатах делают отметку в личном удостоверении. Без медосмотра к работе не допустят. 2. Профессиональные знания и навыки Знание технологии убоя и разделки. Забойщик должен понимать весь цикл: от оглушения и обескровливания до съёмки шкуры, нутровки и разделки туши. Умение работать с инструментами. Нужно уметь правильно использовать ножи, приспособления для оглушения и другие инструменты. sovminlnr.rustudy-center.ru Навыки контроля качества. Важно уметь замечать признаки заболеваний у животного до забоя (повышенная температура, выделения, опухоли) и не допускать убой больного скота. Принципы санитарной безопасности. Забойщик должен знать и соблюдать санитарные нормы: как содержать рабочее место в чистоте, как дезинфицировать инструменты и спецодежду. Ветеринарная справка. Перед работой забойщик проверяет наличие ветеринарной справки на животное. Она действует ограниченное время (часто не более 2 3 суток), и без неё убой запрещён. Ведение журналов. Забойщик фиксирует данные об убое (дата, ФИО владельца, номер справки) в журнале учёта убойных животных. Санитарные и организационные требования Спецодежда и средства защиты. Забойщик обязан работать в санитарной одежде и обуви. Подготовка рабочего места. Перед работой нужно проверить чистоту места, наличие подстилки, воды (зимой воду подогревают), посуды для крови, вешал для туш.
