- Приготовление холодных, первых, вторых, третьих блюд и кулинарных изделий. - Работать на основании ежедневного меню по технологическим картам. - Обеспечивать нормы закладки и выход блюд в соответствии с нормативами. - Сохранять контрольные суточные пробы блюд в соответствии с нормативами. - Обеспечивать правильное хранение имеющихся продуктов питания. - Участвовать в накрытии комплексных обедов по ежедневному меню в строгом соответствии с технологией приготовления. - Содержать в чистоте технологическое оборудование, посуду для приготовления блюд, посуду для питания школьников. - Соблюдать правила санитарии и гигиены на рабочем месте. Работает в белом халате и шапочке (колпаке). - Соблюдать правила безопасности и электробезопасности, правила эксплуатации технологического оборудования столовой, пользования моющими и дезинфицирующими средствами. - При завершении работы уборка рабочего места, обработка инвентаря, посуды, выключение технологического оборудования. - Соблюдать правила и нормы противопожарной безопасности и охраны труда, правила внутреннего трудового распорядка.

-Знать технологию приготовления первых, вторых, холодных, сладких блюд и изделий из теста в ассортименте обработки (варки, припускания, выпечки); -Приготовление различных видов пассировок; нормы, соотношение и последовательность закладки сырья, правила изготовления порционных полуфабрикатов из говядины, птицы; порядок обработки рыб; правила бракеража и порядок сдачи сырья и готовых изделий на лабораторный анализ; -Правила составления меню; -Порядок пользования сборником рецептуры; основные виды сырья и их кулинарное назначение, признаки доброкачественности сырья и органолептические методы их определения; -Выход готовых изделий, проценты уварки, упека и увеличения в объеме; условия, сроки хранения и реализации готовой продукции и полуфабрикатов; основные типы механического, теплового, весоизмерительного и холодильного оборудования, основы организации труда; основы законодательства о труде; правила внутреннего трудового распорядка; правила и нормы охраны труда.
