- организовывать проведение медицинских осмотров персонала - организовывать обучение и аттестацию работников по санитарно-гигиеническим вопросам - проводить работу по профилактике и участвовать в расследовании пищевых отравлений и инфекционных кишечных заболеваний - осуществлять контроль соблюдения и формировать изменение ККТ (критических контрольных точек), по программе ХАССП, инструкций - осуществлять разбор нарушений санитарно- гигиенической дисциплины - производить забора материала, знать правила его хранения и доставки в лабораторию - принимать участие в претензионной работе с поставщиками, разработке совершенствовании внедрении системы управлении качеством продукции - разрабатывать комплексные планы санитарно-гигиенических и противоэпидемиологических мероприятий и организовывать их выполнение - осуществлять систематический контроль за качеством поступающих в предприятия общественного питания продовольственных товаров, условиями их транспортировки, хранением и сроками реализации - осуществлять контроль соблюдения работниками санитарных правил обработки сырья, приготовления блюд, кулинарных и кондитерских изделий, санитарных требований по обработке посуды, инвентаря, оборудования - принимать участие в подготовке и проведении совещаний по вопросам гигиены питания и противоэпидемиологическим вопросам - обеспечивать и систематически контролировать правильное ведение и оформление требуемой контрольной документации производства
