Производственный процесс: - от планирования мероприятий до исполнения; - контроль проведения; - разработка и внедрение в производство новых блюд, калькуляция и т. д. Закупки (продукты, оборудование, инвентарь и т. д.): - планирование, сверка остатков, приемка; - эффективное и рациональное использование продуктов, оборудования. Доходы: - анализ наличия продуктов, полуфабрикатов, десертов; - реализация в розницу и под заказ; - организация и ежедневный контроль оплаты питания персонала кухни, работников, гостей; - исполнение планового показателя по доходам; - повышение уровня доходности. Оформление документов: - своевременное, качественное оформление проведения мероприятий, прихода, расхода, списания, сверка остатков, инвентаризация; - использование программного обеспечения СИГМА, 1С, Тезис, кассовое оборудование и др.; - электронный документооборот, согласование, подписание и др.; - надлежащее ведение, оформление и заполнение необходимых журналов; - соблюдение санитарных и гигиенических правил и норм на производстве. Персонал: - поиск, подбор, собеседование, инструктажи, наставничество, контроль во время испытательного срока; - трудовая дисциплина, внешний вид; - изучение и внедрение новых тенденций, технологий в производство; - обучение персонала.

Должен знать: - порядок и методы текущего производственного планирования; - правила производства и реализации продукции общественного питания; - санитарно-гигиенические и технологические требования; - сборники рецептур блюд и кулинарных изделий; - требования к безопасности продовольственного сырья и продуктов; - организацию общественного питания и обслуживания посетителей; - международные правила этикета и делового общения, нормы и стандарты профессиональной этики; - основы трудового законодательства. Среднее профессиональное образование или высшее образование и не менее 3 лет практического опыта на должности не ниже шеф-повара, а также дополнительное профессиональное образование - программы повышения квалификации, программы профессиональной переподготовки по управлению рестораном. Опыт работы: от 3 лет
