Лаборант химического анализа обязан: Осуществлять контроль органолептических и физико-химических показателей поступающего и отгружаемого сырья, контроль за соблюдением условий хранения сырья, качеством его в процессе хранения и перед пуском в производство. Вести подбор партии сырья по его физико-химическим показателям для обеспечения выработки продукции соответствующего качества. Устанавливать причины отклонения физико-химических показателей качества сырья, полуфабрикатов, готовой продукции, параметров технологических процессов от нормативных. Контролировать соблюдение технологических режимов на всех стадиях производства. Участвовать в контрольных выработках продукции для проверки соответствия расхода сырья и выхода готовой продукцию действующим нормативам. Оценивать качество и устанавливать сортность сырья, продукции, давать заключение о соответствии их требованиям стандартов и технических условий. Правильно эксплуатировать оборудование лаборатории, средства измерений, контроля. Осуществлять правильное оформление и ведение журналов на рабочих местах и др. документов. Готовить химические реактивы и растворы для проведения лабораторных исследований. Вести анализ качества продукции, выработанной комбинатом. Контролировать соблюдение санитарно-гигиенических требований на всех участках производства и лаборатории.

Должен знать: биохимию и микробиологию молока, молочных продуктов; технохимический и микробиологический контроль молока и молочной продукции; технологические требования к сырью, материалам, воде, припасам, готовой продукции; действующие стандарты, технические условия на сырье, материалы, продукцию, тару, методы испытаний, инструкции, положения и другим НТД; методы проведения технологических анализов; оборудование лаборатории, принцип его работы и эксплуатации; технологию производства молочной продукции и контроль её качества; технические характеристики, устройство и назначение, режим работы технологического оборудования, порядок ведения и заполнения установленной документации; основы работы на компьютере.
