составлять двухнедельное цикличное меню и ежедневные меню-раскладки с учетом калорийности, витаминной и минеральной ценности рациона, сезонности продуктов и требований СанПиН 2.4.3648-20; обеспечивать разнообразие ассортимента блюд с учетом возрастных особенностей обучающихся; организовывать специальное питание для детей с ограниченными возможностями здоровья, пищевыми аллергиями и иными медицинскими показаниями по согласованию с медицинским работником школы-интерната; контролировать соблюдение норм питания на одного обучающегося в соответствии с Приказом Минпросвещения России от 30.08.2021 № 540; Приемка и контроль качества: совместно с заведующим складом осуществлять контроль за своевременной доставкой продуктов питания со склада, проверять их количество, ассортимент, качество и наличие сопроводительной документации (сертификаты соответствия, ветеринарные сопроводительные документы, документы о качестве); отстранять от использования продукты с истекшими сроками годности, признаками порчи или без надлежащей сопроводительной документации; Технологический процесс: осуществлять постоянный контроль за соблюдением технологических процессов приготовления блюд, норм закладки сырья и полуфабрикатов; проводить ежедневный бракераж готовой пищи в составе бракеражной комиссии, возглавляемой шеф-поваром, с обязательной записью в бракеражном журнале; контролировать соблюдение работниками пищеблока санитарных требований, правил личной гигиены и производственной санитарии; организовывать правильную эксплуатацию, своевременную чистку и дезинфекцию технологического оборудования, инвентаря и посуды; Управление персоналом: осуществлять расстановку поваров и других работников пищеблока, составлять графики их работы с учетом требований трудового законодательства; проводить инструктажи по охране труда, санитарии, технике безопасности и технологии приготовления пищи; организовывать обучение и повышение квалификации работников пищеблока; контролировать соблюдение работниками трудовой и производственной дисциплины; Учет и отчетность: организовывать ведение учета продуктов, полуфабрикатов и готовой продукции; обеспечивать своевременное составление и представление установленной отчетности (отчеты о движении продуктов, отчеты о питании, бракеражные журналы); вести журналы учета температурного режима холодильного оборудования, журналы бракеража, журналы учета дезинфекции и дезинсекции;
