Обеспечивает надлежащий уровень качества лечебного питания в учреждении. Внедрение новых технологий диетического (лечебного и профилактического) и энтерального питания.Организация и проведение энтерального питания. На этапе, приготовления пищи компанией- аутсортером, врач- диетолог должен правильно подготовить техническую документацию, составить картотеку диетических блюд, семидневное меню стандартных, специальных диет. Принимает участие в разработке сводного семидневного меню и меню-раскладок, набора смесей для энтерального питания.Осуществляет контроль: - за качеством поставляемых исполнителем блюд и условиями их приготовления; - периодический (внезапный) совместно с медицинской сестрой диетической или администрацией учреждения за закладкой продуктов питания в котел, контролирует вес, качество продуктов питания, выборочно проверяется вес порций готовых блюд и одновременно производится органолептическая проба пищевых продуктов. О результатах проверки составляется акт. - за качеством готовой пищи перед выдачей ее в отделения; - за ведением картотеки блюд. Консультирует врачей отделений по вопросам назначения лечебного питания пациентам и больных по вопросам лечебного и рационального питания. Проводит выборочную проверку историй болезни по соответствию назначаемых диет заболеваниям и анализ эффективности лечебного питания.Врач-диетолог является членом совета по лечебному питанию.Принимает необходимые меры по предупреждению заноса и распространению инфекций.
