-осуществляет механическую кулинарную обработку сырья и пищевых продуктов; -осуществляет тепловую обработку продуктов и полуфабрикатов; -выполняет операции по подготовке картофеля, офощей, грибов, рыбного и мясного сырья, сельскохозяйственной птицы к тепловой обработке в соотвествии с технологическими процессами; -осуществляет процесс пригототвления полуфабрикатов из котлетной массы (рыбной, мясной, из птицы); -осуществляет процесс приготовления теста для блинов, оладий, блинчиков; -проводит тепловую обработку, соблюдая правила варки, жарения, запекания; -осуществляет технологию приготовления, правила раздачи, сроки годности и условия хранения блюд; -использует по назначению технологическое оборудование, весоизмерительных приборов и посуды. Соблюдает правила ухода за ними; -знает виды, свойства и кулинарное назначение картофеля, овощей, грибов, круп, макаронных изделий, признаки и методы определения их доброкачественности; -содержит технологические карты, рецептуры блюд, требующих простой кулинарной обработки.

Повар должен знать: -правила рациональной организации рабочих мест при приготовлении блюд; -правила порционирования блюд массового спроса; -нормы отпуска, правила раздачи, порционирования и оформления вторых блюд, условия их хранения на раздаче и сроки реализации; -показатели качества супов, вторых блюд; -правила пользования и санитарного ухода за посудой, инвентарем и инструментами для раздачи готовых блюд и напитков; -правила и способы рациональной организации рабочих мест для раздачи и отпуска супов, вторых блюд, напитков.
