График и время работы - 5/2 с 8:00 до 17:00; Организация полного цикла первичной переработки живой рыбы; Контроль качества обескровливания; Соблюдение регламента холодовой цепи при обработке рыбы; Нормирование и контроль выхода ПСГ, анализ отклонений, работа над снижением технологических потерь и брака; Разработка, внедрение и поддержание в рабочем состоянии системы ХАССП в цехе; Организация санитарной обработки в цехе; Руководство коллективом цеха.

Высшее или среднее профессиональное образование: технология рыбы и рыбных продуктов, технология продуктов питания животного происхождения, ветеринарно-санитарная экспертиза либо смежное; Опыт руководства участком или цехом пищевого производства от 3 лет, из них не менее 1 года в переработке рыбы; Практическое знание технологии первичной переработки лососёвых: обескровливание, потрошение, требования к охлаждённой продукции; Понимание принципов ХАССП и умение работать с документацией системы менеджмента безопасности пищевой продукции; Опыт работы в ФГИС Меркурий; Уверенное владение Excel и 1С на уровне производственного учёта; Действующая личная медицинская книжка; Готовность к работе в холодном влажном помещении и к ненормированному графику в дни массовых изъятий; Приветствуется опыт работы с УЗВ или садковыми хозяйствами, понимание специфики живого сырья, опыт работы на объёмах от 100 тонн готовой продукции в месяц.
