Подготавливать сырье, мыть овощи, фрукты для дальнейшей кулинарной обработки. Удалять с использованной посуды остатки пищи и осуществлять сбор пищевых отходов. Своевременно собирать и выносить из пищеблока пищевые отходы в специальные контейнеры для отходов. Мыть столовую и кухонную посуду, лотки и инвентарь с применением моющих и дезинфицирующих средств. Разводить моющие и дезинфицирующие растворы. Содержать в чистоте и порядке кухонный инвентарь (стеллажи для сушки бачков, поддонов, жарочных листов, разделочных досок и иной кухонный инвентарь) и оборудование (посудомоечные машины, плиты, духовые шкафы, моечные ванны и другое) Чистить и дезинфицировать мойки, раковины и другое санитарно техническое оборудование. Убирать закрепленные за ним помещения пищеблока (удалять пыль, мыть полы, стены, оконные рамы и стекла, шкафы, стеллажи). Содержать в чистоте полы на кухне и в подсобных помещениях. Соблюдать требования к качеству, температуре блюд и напитков при подаче. Осуществлять уборку оставшейся использованной посуды со столов, производить санитарную обработку после каждого накрытия. Готовить посуду к обработке в посудомоечной машине. Поддерживать чистоту и порядок в зале в соответствии с требованиями СанПиН. Следить за количеством и состоянием столовых приборов и сервировки Доставлять продукты из кладовой в производственный цех, открывать бочки, ящики, мешки с продуктами, чистить картофель, овощи и плоды вручную или на машине, дочищать. Очищать мусоросборники, промывать их дезинфицирующим раствором, собирать мусор и относить его в отведенное место с пищеблока. Выполнять требования действующих инструкций по последовательности поточности технологических операций и др., разработанных на принципах ХАССП.
