Опыт работы. При наличии профессионального обучения требуется не менее одного года работы в организациях питания по приготовлению блюд, напитков и кулинарных изделий под руководством повара Особые условия допуска к работе. Наличие медицинской книжки, прохождение обязательных предварительных и периодических медицинских осмотров Кухонный работник должен знать действующие сборники рецептур, технологические инструкции и правила пользования ими; виды, свойства и кулинарное назначение пищевого сырья, полуфабрикатов, признаки и органолептические методы определения их доброкачественности; правила, приёмы и последовательность выполнения операций по подготовке продуктов к тепловой обработке; устройство, назначение, правила регулировки и эксплуатации оборудования, машин, инвентаря, инструмента, весоизмерительных приборов, посуды; основы трудового законодательства, правила охраны труда, производственной санитарии и личной гигиены, пожарной безопасности; приёмы оказания первой доврачебной помощи при несчастных случаях
