Contexte ##

Le Centre hospitalier universitaire vaudois (CHUV) est l-un des cinq hôpitaux universitaires suisses, et figure parmi les meilleurs établissements hospitaliers au monde selon le classement Newsweek 2026. Grâce à sa collaboration avec la Faculté de biologie et de médecine de l-Université de Lausanne et l-EPFL, il joue un rôle de référence dans les domaines des soins, de la recherche et de la formation.

Au sein du Département de la logistique hospitalière (DLOH), la restauration du Service hôtelier regroupe plusieurs cuisines d-envergure qui produisent chaque année plus de 2,2 millions de repas pour les patient-e-s, les collaborateur-trice-s et les visiteurs. Plus de 280 professionnel-le-s y œuvrent avec exigence et esprit de service. Grâce à nos nombreuses cafétérias et restaurants, vous alternez les postes (production, pâtisserie, garde-manger, ligne de service) et développez une polyvalence recherchée.

Mission ##

  • Vous élaborez des plats et menus en fonction des saisons, des produits et des besoins de nos différents clients (patients, personnel, visiteurs)
  • Vous préparez la préparation des aliments (éplucher, laver, tailler, peser, portionner) puis apprêtez les mets qui composent les menus
  • Vous appliquez les principales méthodes de cuisson (blanchir, rissoler, pocher, étuver, gratiner, rôtir, griller, braiser) en maîtrisant temps et températures
  • Vous dressez et présentez des assiettes appétissantes, visuellement et gustativement.
  • Vous participez à la préparation de menus et de collations pour des événements liés au CHUV (apéritifs, manifestations, salons)
  • Vous contribuez aux commandes, réception et entreposage des denrées en respectant la législation et les règles d-hygiène (HACCP)
  • Vous entretenez les postes de travail, évaluez l-état hygiénique des installations, nettoyez et triez les déchets selon les directives de l-institution
  • Vous découvrez tous les postes de cuisine (y compris garde-manger, pâtisserie et boucherie) pour développer des compétences complètes.

Profil ##

  • Vous avez terminé votre scolarité obligatoire et souhaitez apprendre un métier manuel, concret et utile
  • Vous êtes créatif-ve, faites preuve d-imagination et avez le sens du goût et de la présentation
  • Vous travaillez avec rapidité, rigueur et organisation, même lors des -coups de feu-
  • Vous êtes flexible et capable de vous adapter à des horaires irréguliers ou de week-end
  • Vous résistez au stress, aimez le travail en équipe et le contact.
  • Vous êtes aptes à vous intégrer dans différentes équipes au grès des tournus.
