The posting

Als kok bij Bazaar Restaurant in Borsbeek ben je verantwoordelijk voor de bereiding van authentieke gerechten uit de Centraal-Aziatische keuken. Je werkt in een kleine, professionele keuken en staat mee in voor de kwaliteit van elk bord dat de keuken verlaat. Je moet vertrouwd zijn met de Centraal-Aziatische keuken, haar traditionele recepten, kruiden en bereidingswijzen, zodat de smaken van onze gerechten authentiek blijven.

Je taken:

  • Je doet de mise-en-place: je snijdt groenten en vlees, maakt marinades klaar en bereidt sauzen en bijgerechten voor.
  • Je maakt deegwaren met de hand, zoals manti, samsa, chibureki, pilmeni en lagmannoedels.
  • Je bereidt plov in een kazan volgens het traditionele recept.
  • Je kookt de bestellingen tijdens de lunch- en avondservice, snel en in de juiste volgorde.
  • Je bewaakt de smaak, de portiegrootte en de presentatie van de gerechten.
  • Je werkt volgens de halalregels bij de aankoop, de bewaring en de bereiding van vlees.
  • Je volgt de voorraad op, meldt tekorten en controleert leveringen bij ontvangst.
  • Je zorgt voor de juiste rotatie en etikettering van producten (FIFO).
  • Je houdt je werkplek, het materiaal en de koelruimtes proper volgens de HACCP- en FAVV-normen.

Je werkt in een uurrooster met avond- en weekenddiensten.

  • Je hebt grondige kennis van en ervaring met de Centraal-Aziatische keuken, inclusief de traditionele recepten, kruiden en bereidingswijzen. Zo blijven de smaken van onze gerechten authentiek.
  • Je hebt minstens 3 jaar ervaring als kok in de Centraal-Aziatische keuken.
  • Je kunt zelfstandig traditionele deegwaren maken, zoals manti, samsa en lagmannoedels.
  • Je hebt ervaring met plov in een kazan.
  • Je kent de regels voor halal koken en past ze correct toe.
  • Je kent de basisregels van hygiëne en voedselveiligheid (HACCP/FAVV).
  • Je kunt zelfstandig werken en ook vlot samenwerken in een klein team.
  • Je bent stressbestendig en blijft nauwkeurig tijdens drukke services.
  • Je bent flexibel en bereid om ‘s avonds, in het weekend en op feestdagen te werken.
  • Kennis van Russisch of een Centraal-Aziatische taal is een pluspunt.
