The posting

Voor onze vestiging Akshiro Sushi op de Grote Markt in Zelzate zijn wij op zoek naar een gepassioneerde en ervaren Sushi Chef Kok.

​In deze functie ben je verantwoordelijk voor de dagelijkse bereiding van onze verse sushi, sashimi en curry's. Je waakt over de smaak, de presentatie en de constante kwaliteit die onze gasten van ons gewend zijn.

​ Jouw takenpakket:

  • ​ Bereiding: Vakkundig snijden en fileren van dagverse vis, koken en op smaak brengen van de sushirijst, en het rollen/opmaken van sushi, maki, nigiri en sashimi.
  • ​ Mise-en-place: Zorgen dat alle ingrediënten en de werkplek perfect voorbereid zijn voor de service.
  • ​ Kwaliteits- en hygiënecontrole: Strikte naleving van de HACCP-normen, hygiëneregels en temperatuurbeheersing.
  • ​ Voorraadbeheer: Controleren van de versheid van geleverde vis en overige ingrediënten, en het tijdig signaleren van bestellingen om derving te voorkomen.
  • ​ Onderhoud: Schoonhouden van de keuken, werkvlakken en materialen volgens de geldende hygiënevoorschriften.
  • Ervaring: Minimaal 2 jaar relevante werkervaring als sushi chef of kok in een Aziatisch/Japanse keuken.
  • ​ Kennis: Uitstekende snijtechnieken, viskennis en ervaring met de bereiding van sushirijst.
  • ​ Attitude: Je werkt nauwkeurig, hygiënisch en zelfstandig, ook tijdens drukke piekuren.
  • ​ Flexibiliteit: Je bent bereid om te werken tijdens avonduren, op feestdagen en in het weekend (volgens het uurrooster van het restaurant).
  • ​ Talen: Je hebt een goede kennis van het Engels (voor de communicatie binnen het keukenteam en de bediening). Kennis van de Nederlandse taal is een pluspunt, geen vereiste.
