Vi søger en dygtig og erfaren køkken souschef med speciale i japansk yakitori til vores køkken.

Du bliver en central del af køkkenteamet og får ansvar for den daglige drift af yakitori-køkkenet samt for at sikre høj kvalitet og ensartethed i tilberedning og grillning.

Dine primære arbejdsopgaver vil være:

  • Tilberedning og tilberedningsforberedelse af yakitori
  • Grillning af yakitori på professionelt niveau
  • Ansvar for den daglige drift og organisering af yakitori-køkkenet

  • Har erfaring med menuudvikling og gerne udvikling af nye yakitori-koncepter
  • Kan arbejde selvstændigt og tage ansvar for et køkkenområde
  • Har gode samarbejds- og lederevner
  • Kan arbejde struktureret og bevare overblikket i et travlt køkken
  • Har fokus på kvalitet, detaljer og gæsteoplevelsen

Kitchen Sous Chef – Yakitori Specialist at La Pausa Restaurant

We are looking for a skilled and experienced Kitchen Sous Chef specializing in Japanese yakitori to join our kitchen team.

You will play a key role in the daily operation of the yakitori kitchen and will be responsible for maintaining a consistently high standard of preparation, grilling, quality and presentation.

Your main responsibilities will include:

  • Preparation and mise en place of yakitori
  • Professional yakitori grilling
  • Responsibility for the daily operation and organization of the yakitori kitchen
  • Coordinating and guiding kitchen staff
  • Ensuring consistent quality, taste, presentation and preparation standards
  • Developing and designing new yakitori dishes and menus
  • Contributing to the development of the kitchen concept and working procedures
  • Maintaining high standards of hygiene, organization and service flow
  • Assisting the Head Chef and taking responsibility in their absence when required

We expect you to:

  • Have solid professional experience in Japanese cuisine, particularly yakitori
  • Have proven skills in yakitori preparation and grilling
  • Have professional experience working with a yakitori grill
  • Have a strong understanding of ingredients, cutting techniques, marinating, preparation and grilling techniques
  • Have experience with menu development and preferably developing new yakitori concepts
  • Be able to work independently and take responsibility for a kitchen section
  • Have good teamwork and leadership skills
  • Be organized and able to maintain an overview in a busy kitchen
  • Have a strong focus on quality, detail and the guest experience

Experience from a restaurant where yakitori is an important part of the kitchen concept will be considered an advantage.
